Back-Pressure and Drum Airflow Dynamics
A roasting drum relies on negative pressure to continuously sweep out smoke, water vapor, and chaff particles. If exhaust ducting features excessive 90-degree elbows, undersized pipe diameters, or upward vertical runs exceeding fan static pressure capacity, positive back-pressure develops.
Back-pressure traps moisture in the drum, resulting in baked flat flavor profiles and potential grease condensation in the chimney line.
Standard Ducting Guidelines
Use exclusively single-wall or double-wall positive-pressure rated 304 stainless steel piping. Maintain a minimum upward pitch of 2 degrees on horizontal runs, utilize long-sweep elbows with a centerline radius of at least 1.5 times the duct diameter, and incorporate quick-clean cleanout ports every 2 meters.
