The Mechanics of the Bean Curtain

In standard single-speed commercial roasters, the drum rotates at a fixed rate (typically 50–55 RPM on a 15 kg machine). However, optimal bean tumbling dynamics vary dramatically depending on whether you are roasting a full 15 kg production batch or a half-capacity 7.5 kg batch.

RC-Tech equips all CAST and IS roasters with Variable Frequency Drive (VFD) drum motors, giving operators stepless RPM control from 30 to 75 RPM directly from the touch panel.

What Happens When Drum RPM is Too Low? - The coffee bean bed slides along the lower curved wall of the drum instead of lifting. - Contact time with superheated metal surfaces increases by up to 60%, resulting in conductive face-burning and uneven development between bean cores and surfaces.

What Happens When Drum RPM is Too High? - Centrifugal force pins green beans against the drum circumference, preventing them from falling through the central convective hot air stream. - Chaff fails to separate cleanly, leading to smoky, bitter flavor taints.

Sizing Drum RPM by Batch Weight: - Full Capacity (100% Charge): Moderate RPM (e.g., 52–56 RPM on CAST-15) creates a cascading "waterfall" bean curtain directly through the thermocouple measuring zone. - Half Capacity (50% Charge): Increase RPM by 4 to 6 RPM to lift the smaller bean volume higher, ensuring beans properly immerse the tip of the PT100 temperature probe. - Delicate Anaerobic / Natural Lots: Increase RPM by 10% to minimize contact time against the hot drum skin and maximize gentle convective heat transfer.
