Triple-Layer Composite Drum Metallurgy: Eliminating Conductive Scorch in Specialty Coffee

Single-wall cast iron or thin carbon steel drums frequently induce surface tipping and scorched face defects when roasting low-density or high-moisture specialty coffee. RC-Tech’s triple-layer composite drum architecture solves this thermodynamic dilemma.

The Thermodynamic Dilemma of Single-Wall Drums

In traditional drum roasters, the inner drum surface directly contacts the tumbling coffee bed. When heat is transferred predominantly via conduction (direct metal-to-bean contact), high flame inputs can easily cause the drum face temperature to exceed the thermal tolerance of green bean cellular structures.

The result is surface tipping, facet scorch, and burnt volatile aromatics—especially on delicate washed Ethiopian, Kenyan, or anaerobic processed lots where uniform cellular expansion is critical.

The Three-Layer Composite Solution

RC-Tech engineers developed a multi-ply drum construction utilizing two high-grade structural carbon steel cylinders separated by an engineered 1,260°C ceramic thermal insulation barrier and an active thermal air gap.

The inner carbon steel shell delivers gentle, uniform conductive heating across internal helical mixing flights. The intermediate ceramic barrier blocks direct radiant burner spikes, while the exterior heavy thermal casing maintains thermal equilibrium between consecutive roasting batches.

Achieving a 70:30 Convective-to-Conductive Ratio

When the drum face stays within ±1.5°C across back-to-back charges, you can push airflow until convection carries about 70% of the total heat. That is the point where cup acidity stays clear and bean cores caramelize evenly — without facing defects.
