Conductive vs. Convective Heat Transfer in Double-Wall Roaster Drums

By RC-Tech Metallurgy & Thermodynamics Lab · Engineering · 7 min read

An engineering analysis of how double-wall composite carbon steel drums minimize surface conduction hotspots while accelerating convective thermal efficiency.

The Thermal Challenge of Single-Wall Roaster Drums

In traditional single-wall coffee roasters, direct flame impingement on the rotating drum cylinder creates localized thermal hotspots exceeding 380°C. When green coffee beans contact these superheated metal surfaces during the charge and early drying phases, the fragile cellular matrix of the bean is susceptible to surface scorching, tipping, and facing.

These surface defects impart astringent, bitter, and carbonized flavor taints that cannot be corrected during cupping.

The Double-Wall Composite Solution

RC-Tech pioneered the integration of double-layer carbon steel drums with an engineered internal air barrier. By introducing a calculated gap between the outer flame contact shield and the inner bean cylinder, the thermodynamic profile is fundamentally altered:

1. Air Buffer Thermal Damping: The air gap acts as an insulator, converting erratic direct flame heat into uniform radiant energy. 2. Mild Conduction: Drum face temperatures remain below the scorch threshold (under 240°C), preventing charring on delicate micro-lots. 3. Convective Dominance: Higher vacuum air volume through the center of the drum carries 70% to 80% of total heat energy via convection, penetrating the center core of dense high-altitude green coffee beans evenly.

Laboratory Results on Geisha Lots

In blind sensory trials with high-density Washed Panama Geishas roasted on the RC ALP-1, double-wall thermal damping preserved 14% higher floral monoterpene aromatics compared to single-wall cast drums, evidenced by heightened jasmine and bergamot flavor clarity.
